Everything Soup
This is what we made tonight to clean out the leftovers from the RV fridge.
Leftover meats (we used roast beef and Galbi pork (Korean BBQ))
Leftover vegetables (we used asparagus, carrots, cauliflower, and broccoli)
Stock (we used about five cups)
1/2 large onion
1 can diced tomatoes
Minced garlic to taste
Chop already cooked meats, vegetables, and onion into small pieces, and place in a stock pot. Add stock, tomatoes (with water) and garlic.
Bring to a boil, then simmer about 30 minutes to blend flavors.
Serve with oyster crackers.
Makes about eight large servings.
