It all sounds so good. In spring when we can get fresh peaches or nectarines, I make peach pancakes with honey butter. Usually I assemble all the dry stuff at home and seal in a freezer bag. 1 3/4 cup of flour, 2 T sugar, 2 t baking powder, 1/2 t soda and cinnamon, and a scant 1/4 t salt. On the day we want the pancakes, in a bowl slightly beat an egg, with 1 1/2 cups of sour milk, (buttermilk works also) and 3 T of oil. I mix wet with dry,leaving lumpy and then chop up a large peach or two, add to the pancake mix. I serve it with honey butter or syrup.
