Gave up my search for small eggs. They either don't exist in local supermarkets or are stupidly expensive and not even organic.
A sheet pan omelet baked on buttered parchment paper will do fine utilizing cookie cutters to make the egg fit the mini bagels. Now to mince some pork shoulder and fatback together in my Cuisinart with seasonings to make mini sausage patties. Playing w/ AB's recipe; he doesn't use enough sage for me and I'm in query land over his addition of rosemary so I'll just add more sage and drop the rosemary completely in favor of marjoram.
My chest freezer should be filled by the end of this month, LOL.
