I like to proof one, put it in the fridge to slow it down and develop flavor. I make Sourdoughs and Charles Van Over's no-knead breads. Thank Goodness, no one is gluten intolerant in this house, (yet). Stay safe and I hope the storm isn't as bad as they are predicting!
