The internet has an overwhelming number of recipes. The other day I got one for "bean bread" that was just 1 cup cooked beans, 1 banana, 2 T ground flax, 1 t cinnamon and 1/2 t vanilla. Really tasty with some fruit on top. Today I made it with a sweet potato instead of the banana and chopped rosemary instead of cinnamon & vanilla. Again, tasty- this time with a homemade hummus (gluten free& vegan), and a few strips of roasted red pepper.
One of our favorites is roasted vegetables (portabella mushrooms, red pepper, sometimes brussels sprouts, served on black rice (pretty sure rice is gluten free, but it doesn't hurt to check), and some garlicky hummus on the side for dipping. Easy and good.
Tomorrow I'm making a sort of unwrapped cabbage roll, but no meat. Just cabbage, kidney beans, onion, and diced tomatoes (and of course paprika & caraway). Tossed into the crockpot for the day.
This time of year I often make roasted brussels spouts and sweet potato (I pre cook the sweet potato to speed things up). Tossed with some garlic chili sauce and served onto of white kidney beans it is another easy meal that will please everyone.
Try to serve beans or legumes with a meal - they are a good source of protein (and fibre), and are filling.
Vegan eating can be good, even for the non-vegans ;-)

Oh, dessert. Freeze some almond milk into an ice cream tray. Also freeze a banana. Blend those with a tablespoon of peanut butter (or other nut butter), a tablespoon of coco, and a dash of cold almond milk and you have a sort of ice cream. Yum.
