I eat a fairly clean, mostly plant based diet. I actually feel really uncomfortable when people ask me over for dinner because I'm picky about what I eat and I don't want them to feel bad or pressured trying to accommodate me! I feel better when they ask me to bring along a dish to share that I like. That way I know there is at least something I can eat and provides some relief to the host too. No matter what you make you could always include a salad. Most healthy eaters including gluten free vegans LOVE salad. A salad "bar" set up would be a dream come true for me! With lots of different toppings. Another simple idea that everyone can enjoy is make your own tacos. That way you can still have meat, cheese, etc. for the meat eaters and the non-meat eaters can have a taco salad with beans, guacamole, veggies, etc.
