Charleston 15 bean soup - soak the beans overnight, put with ham bone in a crockpot or stockpot with a big chopped onion, six chopped garlic cloves, bay leaf, chopped red & green peppers, carrots, celery, fresh ground pepper.
Cook 3 hours on stove or six hours on low in crock. Pull out the bone midway, cut off the ham meat and chop it, set aside. Add a can of petite dice tomatoes including juice for the last hour. Return the chopped ham to the pot to heat well before serving.
Serve with cornbread and Tabasco sauce.
