Lentil soup. Sweat some finally chopped carrots, onions and garlic with a couple tbs of oil, add some thyme, 2 quarts low sodium stock of choice, add the ham bone and lentils. Cook for about an hour on just above simmer, with a just barely open lid. Salt and pepper to taste. Good eatin.
