In the morning add:
The ham bone
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
1 1/2 tsp salt
1/2 tsp cayenne
1 Bay leaf
Simmer this soup all day. Then remove the remaining meat from the ham bone, dice it up and return to the pot. Discard the bone.
Ladle into bowl. Garnish with diced monterey jack cheese, diced avocado and crumbled tortilla chips.
