It's funny how everyone is going with beans... We make plain old ham bone soup. Simmer the bone in lots of water for hours. Put it in the fridge overnight to be able to skim the fat off the top. Cut up the meat off the bone and set aside in fridge till later. Put the stock on the stove and add lots of veggies... Chopped potatoes and carrots, green beans, corn, peas, cauliflower. Add a few spices of your liking. Simmer till veggies are tender then add in the ham pieces.
Yum. And this only gets better with time.
This is exactly the way I make turkey soup also except I omit the potatoes and serve with cooked noodles.
We are having bean soup tomorrow, but not with a precious ham bone. :)
