Soak a package of Black Eye Peas overnight
Simmer the bone in lots of water for hours. Put it in the fridge overnight so you can skim the fat off, after that is done add the ham broth and chunks to the Black Eye Peas. Adding a chopped onion and your favorite seasonings. I use Suzi Q.
Simmer until Black Eye Peas are tender stirring occasionally.
Serve with Buttered Cornbread and Molasses. And Ice tea.
Some like to have a bottle of Tabasco handy just incase the feeling strikes.:B
