Granola
6 cups old fashioned oatmeal in huge bowl.
Add mixed nuts (Our produce dept. has containers of this-just avoid chocolate covered anything)
Add dried fruit, 1 Tblsp. cinnamon, 1/2 tsp. kosher salt, 1 Tblsp. baking cocoa, chia seeds, flax seeds, 1/4 tsp. nutmeg, 1/4 cup brown sugar, a bit of nutritional yeast if you have it.
Use glass measuring cup - combine equal parts local honey, sunflower oil, maple syrup (or molasses) to measure 1 cup. Throw in some maple flavor or vanilla.
Mix well and pour over oatmeal mixture. Stir to coat everything. Line 2 baking pans with parchment paper (don't skip the paper) and divide granola between 2 pans. Bake 35 minutes at 300 degrees.
Let cool and pour back into big bowl, then stir up well.
I store mine in a crock, uncovered.
