Mexican Rice
Heat a deep skillet or pot
Add 1Tbs Vegtable oil to coat
Add 1Cup white rice. Cook on high heat stirring constantly till rice starts to brown. A couple minutes.
Add 2 1/2Cup water
1/2 to 1 can (4-8oz) tomato sauce to taste
1tsp chicken boullion
1/2tsp chili powder
1/2tsp ground cumin
1/2tsp ground coriander
1/2tsp garlic salt
Stir it up good.
Add a quartered onion.
Return to a boil and then turn down burner to simmer.
Put a lid on it
Forget about it for about 30 minutes
Can be scaled up if your pot is big enough
Typing it out makes it sound more difficult than it is. :)
