If you don't want to cook pork in a slow cooker. At Costco they have pork carnita's pre-cooked. All you have to do is heat the meat in large skillet. The meat is excellent for pork carnita's.
My cousin had a Mexican buffet with pork carnita's and chicken with all the side fixings for a burrito, plus refried beans and rice. On the BBQ they heated up 5 corn tortilla's (no more than 5) wrapped in foil. They must had about 15 packs of tortillas. The tortilla's stayed nice and warm.
