About the easiest one I know is Fiesta Chicken in a crockpot.
Google it for details. Many variations, but basic gameplan is to put four fresh or frozen chicken breasts in a crockpot with cans of drained black beans, drained corn, chopped onion, green pepper if desired, and a half cup of salsa. You can vary the quantities to suit your tastebuds, and double easily. Cook about three hours on high. Mix in a chunk of cream cheese shortly before serving and stir to melt it in.
Serve - as is like a stew, over rice or tortilla chips, or roll up in tortillas. Shredded cheddar makes a nice topping.
I like to add Mes. Dash Chipotle seasoning (salt free,)
