Chicharrones, I think that's how it's spelled. Basically fried pork rinds in red sauce. Make a sauce out of canned tomato sauce, onion, garlic, salt and pepper, maybe some canned green chilis. Make just enough to heavily coat however many pork rinds you want to make. Maybe 2 cups of sauce for bag of rinds. When ready to serve mix the rinds and sauce together. If the rinds aren't drowned in sauce they will retain some crunch and texture but the sauce will thickly soften the outside.
This with some rice, beans from the pot, and tortillas is the way to go.
