I make layered enchiladas for a crowd
same as you would enchiladas, but instead of rolling each one individually, spread a bit of sauce in the bottom of your dish, make a layer of corn tortillas, add more sauce, cheese, meat, onion (whatever filling you like), more sauce, layer of tortillas, sauce, top with cheese. bake at 375 until bubbly.
you can make red sauce with either beef or pork OR green sauce with chicken or pork. Pork is very versatile, works well with either red or green sauce.
for a crowd, I will make one dish a spicier version (adding extra chiles) and one a mild version. You can denote with some olives or sliced peppers on top of the last layer of cheese.
