I assume the canning process does something to it-- it didn't get slimy like fresh okra. Btw, with fresh the trick is to use a little vinegar while cooking the okra down to prevent sliming-- works for me every time.
And I agree-- nothing beats gumbo while camping!
After eating a few bowls, I think I will add another can of just okra next time in addition to the two cans of okra and tomatoes.
