Low Carb Chicken Dish

In shallow bowl mix 1/3 cup low fat buttermilk or evaporated milk, 1/4 cup chopped fresh chives, 1 tsp. Dijon mustard, 1/4 tsp. hot sauce. Soak 4 chicken breasts in milk mixture for several hours and drain. (set a wire rack across the sink and place meat on rack to drain) In plastic bag, combine 1/2 cup dry bread crumbs, 1/2 tsp. salt and 1/2 tsp. black pepper, some Italian seasoning, parsley, lemon pepper (your choice). Add meat and shake well to coat. Move to sprayed oven safe dish. Bake 40 to 45 minutes uncovered.
