I would pre-cook some hearty soups, stews and chili and freeze them flat in ziploc freezer bags. Move one to the fridge in the morning and let it defrost while you're out and about. When you get home you can warm it up and pair it with a pan-grilled panini, wrap or sandwich of some kind. Pre-made taco meat is another thing that can be defrosted and made into burritos or quesadillas and served with warm bowl of black beans. Have fun in Yellowstone. One of our favorite places ever! :)
