Nice tutorial. Looks like my German grandmother's Wiener schnitzel as you mention. She pan fried.
I don't deep fry anything, but get a similar result oven baking with the glass dish painted with a bit of oil and a silicone brush and olive oil misted on the panko covered meat, turning half way thru baking at a moderately high temp, a few minutes on each side. I use the convection setting in the conventional oven for a crispier crunch.
