Chimichurri is a great multi tasking condiment as is pesto. Either can be used as meat marinades, pasta sauces or cooked protein toppers, on bruschetta with a nice slice of cheese or grilled; to cook eggs in as a brunch type breakfast; mixed with cream cheese/sour cream/yougurt or creme fraiche as a dip.
