Pick up a can of fresh backfin, lump crab which you can get at almost all grocery stores.
Fielder's Crab Cakes
1 lb crab meat, rinsed well
7 saltine crackers
1 TBL real mayo
1 tsp. ground mustard
1 egg, beaten well
1-2 tsp Old Bay Seasoning (your preference)
salt and pepper
Mix well and allow to sit for 10-15 minutes. Pat out into good size cakes. Bake 25-30 minutes at 350 or fry in a pan with a small amount of oil.
These just beat the daylights out of the Phillips ones you can get in the store.
