Here in south Louisiana you must have pork, blackeye peas and cabbage.
Pork loin marinated in a cowboy candy, mustard emulsion then pit grilled, black eye peas cooked with bacon(pork fat rules), and broiled cabbage steaks rubbed with garlic and olive oil and sprinkled with Parmesan cheese. Probably sweet potato pie for desert.
