Like he said CS ribs aren't! I'm an Okie and I cool (260 degree) smoke for 2 hr, wrap them in foil and cook 8-10 hr same T. I use a dry rub but you have to make up your own. No one has ever complained about my ribs or boneless Pork Butt. I hate Vinegar, it's for cleaning windows and BBQ Sauce is for Texans who don't like Smoked Ribs.BWAHAHA!
