OK, I will await the howls of indignation from purists, but.....
The best ribs I ever made were in an immersion cooker. Yikes!
Vac sealed ribs with some homemade whiskey BBQ sauce, cooked in water bath overnight. Finished on indoor grill with more sauce. It was so easy and everyone raved about them! Of course, once I explained how I made them they wrinkled their noses and started arguing about how their way was actually a more "appropriate" way of cooking. But they continued to scarf down ribs as they poo-poo'd my immersion cooker method.
Since I can't use smoke, I will always choose immersion over plain baking method now. Very easy for us Yankees that have to cook ribs inside the house.
