Pesto pizza pockets

This year I made homemade pesto from my garden's basil. It turned out fantastic. I took some with us on our last camping trip and used it to make pesto pizza pudgie pies. They were delish!

We used Texas toast bread, spread with pesto, I added mushrooms, sundried tomatoes and chopped artichoke hearts and feta cheese. Slather with butter on the outside and place in a heated pie iron, cook until golden brown. Of course you can add other things as well, but I was going for Greek flavor.

They are a gourmet treat!

    I think what they are calling pudgie pie, I would call a panini.

    The Texas toast is thicker but works perfectly and makes a crispier crust. It also holds up better when using different types of ingredients.

    There are loads of recipes but you just have to be creative.
  • Sounds delicious, even though I have no idea what "Texas toast bread" is, nor "pudgie pies".

    UI have used Toastites (pie irons) before though.
  • I'm missing the mental picture of the "pugie pie". Is this like a grilled cheese sandwich? Or is it just one slice of bread?
  • The T toast sounds rather large for ab iron. Can one assume it mashes down and becomes something like a crust?
