Pumpkin soup in the islands is made from calabeza which can be confusing since it's called "pumpkin" in the English speaking parts of the Caribbean. Can't find it at your local ethnic market? My first substitution would be butternut squash since it's texture is closer to calabeza than American pumpkin but 2nd choice would certainly be American pumpkin. Anyway you do it it's yummy!
