Pumpkin Pie Pudding
From a Gardenweb friend, grainlady:
PUMPKIN PUDDING
1 can (15 oz.) canned pumpkin (plain, not the pumpkin pie mix)
1/2 tsp. pumpkin pie spice
1 1/2c. milk
1 (3.5 oz.) package Instant Vanilla Pudding, you can use sugar_free
Mix pumpkin and pumpkin pie spice together in a bowl with a wooden spoon. Slowly stir in the milk. Mix well. Add the instant pudding mix and stir slowly for about one minute until it thickens. Transfer to a serving bowl or individual servings and chill before serving.
This would be food for those who don't care about the crust on pies, those who don't have an oven in their unit or just those who like the idea of something quick and simple.
