Rancho Beans
An old family favorite, from when I was a kid. Good for using up leftover meatloaf or hamburgers. A great cool-weather meal. Optionally serve with cornbread.
1 lb ground beef or leftover meatloaf or burgers, crumbled
2 small onions, chopped
2 stalks celery, diced
1 green pepper, diced
1/2 tsp salt
1/4 tsp black pepper
2 15 oz cans baked beans
1 15 oz can pinto beans
2/3 c. ketchup
If starting from raw ground beef, brown and crumble.
To cooked meat, add onions, celery, green pepper and cook until soft.
Add remaining ingredients and bake at 325 for 40 minutes.
You can also make in crock pot.
