Recipes for Two

I see people looking for recipe ideas. I have several things that I make that would serve two so I'll post one and see if folks want more. They are easy, few ingredient recipes, often using my very small crockpot, if I have an electric hookup. As I have a small propane tank and I try to conserve for refrigerator use if I don't have electric, I don't use the stove a lot. Love setting up the crockpot in the morning and spending the day hiking or sightseeing and coming home to a good meal.

Did this one at home the other day to practice. Finally have a beans and rice recipe I like.

RED BEANS AND RICE

1 can kidney beans
1 small to medium onion, chopped
1/4 green pepper, chopped
1/2 stalk celery, choppped
1 bay leaf
1/2 tsp. cajun seasoning
1 link smoked sausage (pick your favorite), sliced

Sautee the onion, green pepper and celery until tender. Add to crockpot with drained and rinsed beans. Add other ingredients, add water just to top of other ingredients. Cook on low all day. Your choice of rice, but to keep things simple and save gas, I did one cup of instant rice. Spoon beans over rice, add favorite hot sauce and enjoy.

  • That sounds good except I would use pinto beans. 9i don't like kidney beans). ummm. Thanks for recipe.

  • Steve that sounds like the same recipe we use. The only difference is we often mix in some ham with the sausage. Many recipes miss the bay leaf.
    I should add our enchilada recipe, It's simple and can be made with few ingredients.
    Shredded o or chopped chicken
    Mayo or Miracle Whip
    chopped onions
    chopped peppers (to taste)
    Cumin to taste
    salt.
    Mix the ingredients into the dressing until you have a thick mixture. Roll tortillas with an appropriate amount of filling, and put into a DO or crock pot to heat. Top with sauce, cheese and salsa or pico de gallo.
    I left out quantities because it is easy to fit to what you require.
  • We start out for two, usually end up for 6++!
    Fridge or freeze. Always better the next day!!
  • This one will sound strange but it is SO simple and the taste is out of this world! :B

    Crock pot.
    2 turkey wings
    4 carrots
    2 celery stalks the more the leaves on top the better.
    1 or 2 boxes of Swanson Chicken broth to fill the size of the crock pot you are using (do not use the low sodium one)

    This tastes better if you cook on low for eight hours and/or overnight.

    Take the wings out and throw away.

    This soup is so intense with flavor without a lot of ingredients and is so fantastic tasting by itself you don't even need to add noodles!

    I'd make a double recipe, freeze and save it for another meal.
