First I want to thank all of you for your responses!
I would like to try them all but I only have two skillets.
I am going to glass bead media blast them. I already have a compressor and found a small blasting gun at Harbor Freight on sale for $17. I already have other projects lined up for this after I finish these skillets.
These skillets are in really rough shape and I think that this will remove the rust and smooth the finish inside the skillet.
I will take some photos before and after and post those once I am done.
