Sounds like the heat is way too high. When cooking with cast iron, I usually heat a small (#3) skillet with a little oil until it starts to smoke. I remove the heat, add the eggs and let them cook. The retained heat in the pan is enough to cook the eggs.
On enameled ware, try using "Pan Release". It's a spray used in bakeries to keep bread from sticking. It has a high smoke temp, but leaves little residue. Clean up easy with a paper towel.
