Slab-O-Beef

Rubbed this 19 pound beef shoulder down to rest in the frig until about 11:00 tonight when I inject it and put it to bed in the smoker. 225 box temp with some hickory, pecan & cherry.

  • Hi Dave.. Do you smoke a big cut like that to a specific internal temp? If so, what do you take it to? Do you inject?
  • Looks good. I've been wanting to get a brisket to put on my Traeger. I've done quite a few pork butts lately.
