Here is my mom's coleslaw... shredded cabbage, diced onions, green peppers, cucumbers, and fresh tomatoes with a couple tablespoons of mayo and salt and pepper. If I don't have cukes or green peppers that is okay to, I just leave it out. LOL! I love it with fish or pinto beans. I normally throw it together and then chill it in frig for an hour or so before eating.
