I can relate to the left over problem, but like you said, just eat good. I think I'll follow SuperDave's suggestion and use my smoker tube to smoke a chunk of something for a couple of hours and then throw it into the dutch oven. Might try this on this spring trip and see what I did wrong before going to the NDOG in June. There I can find a lot of good ideas and recipes to try. They are well worth attending.
