Here in Colorado Mexican restaurants out number all but fast food, but that doesn't mean you will like the ones we like. The best you can do is keep trying them until you find one you like.
The food in Mexico isn't bland, it just isn't spicy hot like Tex-Mex is. In fact you are more likely to see fish and seafood than tacos if you are on the coast. Luckily for those that want it hot, you will find salsas on the table to spice it up if you so desire.
Now if you really want Mexican food to your liking, learn to make it. Maybe easier for me with a Mexican honey for 30 years and Grandma on both sides from Mexico. You will find me in the kitchen during most family events, chatting up the girls and learning how to make the foods I love the most. Believe me when I say there is nothing like a tamale fresh out of the steamer and it's even better when you rolled it yourself. :)
