"Wow, I can think of lots of adjectives for Authentique Mexican food and none would be bland. We have found there is no one typical Mexican food and it changes greatly from State to State, (we are talking Mexican States here) Menus in found Chiapas don't have much in common with those in Sonora. Arguably our favorite Mexican dishes come from the State of Oaxaca. It is rare to find restaurants north of the border that serve other than the commonly known mexican dishes."
I couldn't agree more!! Just as BBQ is different depending on where you are in the US, so is the Mexican cuisine from Mexico's state to state.
