Turkey...
I don't wait for the Thanksgiving carcass. I'll get a couple turkey hindquarters, simmer them into the soup base in the crockpot over night and finish the soup the next day. I usually put a little liquid smoke in my turkey soup just to add a different twist. Then I just empty the fridge of veggies. We like FAT noodles. We have an Asian store here that carries big frozen Udon noodles. I also sprinkle a little cheese on top when serving and French bread for dipping.
