I don't save all of my vegetable cuttings, except onions for beans,but I do save chicken. Whole or half chickens and game hens can produce a very good soup base. I put the bones, skin and an onion root end, piece of carrot and celery, if I have them, and boil until the meat comes off the bones. Most of the meat will and the broth with small pieces of meat make a great base, even for a non meat soup..
