No reason at all why you couldnt, although they really wouldn't be traditional spiedies anymore. Traditionally they're cooked over charcoal but gas grills or open fire grilling works too. I'm sure smoked they would take on their own unique flavor... you could even name the smoked spiedies after yourself, a new invention!
