My favorite way to do turkey is in the pressure cooker (takes about 55 minutes, a little longer at higher elevations). I buy a 4 to 5# breast (most folks want the breast meat anyway), and then accompany it with traditional stuffing and mashed potatoes and gravy. The entire meal takes one hour to prep and cook and feed 4 to 6 easily. Have a smaller crowd? Just get a smaller breast, a 3 pounder will feed two and still provide leftovers.
By pressure cooking you are assured of the most moist, juicy, tender turkey you ever tasted. :B
