I know you said you were looking for things other than turkey.....
What I do is get a couple of turkey thighs. I've 'roasted' them in a slow cooker with nothing but some melted butter on top and spices. I'm always amazed how juicy the meat is and yet crispy brown the skin turns out.
The other thing I do is brown in a cast iron skillet then add vegetable broth (no salt if I can get it) cover and let roast in the oven for an hour. To this I add yellow rice and mushrooms and put back in the oven until all the liquid is absorbed. Some vegies on the side and you have a complete meal.
