Here's the recipe I used for sweet potato pancakes. I subbed leftover cooked sweet potatoes for the pumpkin. Came out great. Sorry, I don't know how to make a clickable link. These also froze well in baggies so I could reheat just a few. I was particularly attracted to the buckwheat flour because buckwheat is on my "good to eat" list on a breast cancer survivor's diet. But if you don't have it, use AP I guess. Also note buckwheat flour is dark so the pancakes will have a darker tinge. Buckwheat also is a very complimentary flavor to buttermilk. This batter can also be used in the waffle iron.
