Saute about 2/3-1 cup chopped onions in olive oil over medium heat. When the onions are translucent w/ a small amt of colour, add minced garlic to taste. For say 2 steaks I use 2 nice sized cloves If I've 4 steaks I only use 3 cloves. Add 1 large can (28 oz) of your favourite peeled plum tomatoes that you've smushed by hand. Add approx. 1/4 of a bunch of coarsely chopped parsley and mix into the sauce. Allow to cook down until liquid is almost halved. Should you over cook the sauce just add a bit of wine or water. Salt and pepper the steaks to taste and place atop of the sauce. Drizzle about..1 TB of olive oil atop the fish. Place in pre heated 400 degree oven for about 10 mins or until a knife/fork goes thru the fish with ease. Serve.
