We have traditionally gone to the Mojave Desert to go dirt bike riding and we take all the goods to bake pies, make stuffing, mashed potatoes and gravy. We BBQ the Turkeys is the good old 22" Weber. My Brother does one and I do one. I bone my turkey out completely while it is raw(I leave the wings hanging on). Then I sew it back up and drop it in brine. Following morning I stuff it full and drop that dude on the BBQ for about 3 hrs. and the turkey is perfectly cooked. With out a carcass it cooks perfectly even.
