This and That Soup

End of the week and all we had in the fridge was a little of this and that. Herself made this outstanding soup for lunch that's worth the bragging rights.

We had two grilled sweet Italian sausages; 3 strips of bacon; some leftover chicken; half a small onion; leftover carrots and kale. She sauteed the sausage, bacon, chicken and onion in a dutch oven on the campfire. She then added the carrots and 8 cups of water to the d.o. and let it simmer an hour. At the end she added the kale.

Then she took a couple of leftover breakfast biscuits and put one each in a bowl and ladled the soup overtop. Sadly there's not enough left for supper. :R

Time to hit the store and re-stock.

  • Glad you were able to write out how a leftover dish was made.
    Always the first dish to forget how you did it for my memory banks:).

    Still probing my mother's brain for how she made a bean, veggie and dumpling soup I recall fondly from 40 years back. When pushed, she says it was from hunger, LOL.
  • That sounds good! Sometimes, the best dishes are experiments but the sad thing is, it might never be duplicated again. ;)
