Tomato Juice

We enjoy TJ both stand alone and in the occasional bloody mary. We buy it in the large can and then decant it into a plastic container which is then stored in the fridge. Our RV fridge is measured at 35 to 37 degrees consistently. The problem?

We can barely get to 7 days before it shows signs of fermentation. Carbonation and a sour taste. This next to a 1/2 gallon of milk still fresh after 2 weeks!

Any thoughts?
  • 7 days? You are obviously not mixing sufficient bloody marys. Happy hour is too short, step it up.
  • Wow! Fermented? Keep it around and it will become tomato wine. Now THAT would be an interesting drink!
  • Just drink more bloody Mary's. They're not just for breakfast. :)

Tomato juice mixed with beer came to mind from your description :)

I frequently have an open container of Clamato in my home fridge way longer than a week but that comes packaged in a plastic container and of course it's a different blend but still highly tomato based. BTW, Clamato makes for an excellent bloody, just add a few drops of Tabasco in and don't go light on the vodka :B

Maybe try buying TJ that comes packaged in a plastic container. It may cost a bit more but if you are throwing away product in the metal cans, then that is also driving up the cost.
  • We used to keep large cans of tomato juice on hand to wash the dog after encounters with skunks. If not used soon enough, the juice went through the can. Good luck.
  • My guess it's contaminated when transferred between containers.

For an experiment make room for the original container to fit in the fridge next time you restock. See if it spoils quickly.

Two weeks is great for milk, I rarely see 10 days here at home.
