the trick is higher heat for shorter period of time. I slice the thick chicken breasts to make them thinner, then put in 400 degree oven for 25 minutes. We like this recipe: Mix mayo and grated parmesan cheese and brush on chicken breasts to cover completely. For a large pan of chicken breasts I use 1 c. mayo and 1/4 cup parmesan cheese. Then I sprinkle panko bread crumbs (regular or italian) lightly on top. Bake at 400 degrees for 25 minutes. Remove from oven immediately. Put in a 13x9 inch pan (not broiler pan or shallow pan). I line the pan with foil. This makes moist tender chicken. I'm going to try brushing them with olive oil and italian bread crumbs next time to see if that works as well.
I do the same, only for 20 minutes, and more parm cheese. Delicious recipe, couldn't be easier. think it was in an ad or on the mayonnaise jar label, and also called for a chopped tomato bruschetta sauce to top it with, but it's good either way.
I like to mix in a good dash of Sriracha sauce with the mayo and parm cheese.
