That will work, it would be tough with a whole bird, but I believe you said you were doing a breast. I would plan on using the water when you're applying smoke then pull it out and wrap the breast in foil for the finish. Pulling the water should up the temperature a little and wrapping will keep the moisture in. If you have a couple hours of heavy smoke that should plenty.
